Distilled in 2007 and bottled in 2017, this expression has been matured for a decade in refill Oloroso sherry butts, resulting in a complex and flavorful profile. On the nose, it presents aromas of white grapefruit, grassy and floral notes, lemon thyme, lavender, vanilla oak, apple dusted with icing sugar, white pepper, and white currant-like fruit. The palate offers flavors of almonds, white grapefruit, herbal and oily textures, peppery spice, and waxy orchard fruits. The finish is characterized by barley sugar, pear drops, more oily and herbal notes, peppery almond, vanilla oak, and lemon curd.
